Okay, let me preface this by saying that this recipe is very “Semi Homemade/Sandra Lee,” but these cupcakes really are good (and cute!) I made these out of yellow cake mix, but substituted the suggested amount of water with a can of pumpkin puree. They are iced with cream cheese frosting, made from regular ol’ cream cheese and powdered sugar and topped off with two little candy corns.*
*For some reason, after 24 hours the candy corn melted a little, causing orange streaks on the cupcakes. I suggest putting the candy corn on close to consumption time.
